Its color also acts actively on the antioxidant activity of annatto, protecting cells from oxidative damage from free radicals and thus ensuring the protection of skin tissue. Studies indicate that, among the entire chemical composition of annatto, 5% represent active dyes, among which, more than 80% are due to the presence of bixin.
