CALCIUM GLUCONATE POWDER is the gluconate salt of calcium. An element or mineral necessary for normal nerve, muscle, and cardiac function, calcium as the gluconate salt helps to maintain calcium balance and prevent bone loss when taken orally. This agent may also be chemo preventive for colon and other cancers. Calcium gluconate can be used together with calcium lactate to form a calcium-rich product and is perfect for reverse specification (dipped in sodium alginate bath) without adding any flavor at all to the end product. DISODIUM PHOSPHATE ANHYDROUS functions as an emulsifier, stabilizer and texturizer; it also is a buffering agent, and chelating agent especially for the calcium in milk products. As a food additive, dipotassium phosphate is used in imitation dairy creamers, dry powder beverages, mineral supplements, and starter cultures.
