Process steps from Raw material to Finished Product: This includes peeling, cutting to remove kernels, blanching (95°C, 6 minutes), blast freezing (-24°C, 2 hrs) and freeze drying (70 – 120°C in 8 hrs cycling process) under conditions hygienically controlled and monitored.

FUTURALS PRO CINNAMON BROWN XL is an apple extract derived from freshly harvested apples which are gently dried after extracting the juice. It contains the apple's own sugar and contains the apple's own fruit acids. The high level of colouring is obtained with plant components (polyphenolic substances) and it is possible to obtain a golden brown up to dark brown colour shades.  The colour is stable from pH 3 through to 7 and has good light and heat stability.  This extract can be used to replace Caramel Colours and eliminate E numbers from the label.
