NATUZYM MAX ULTRA is a pectinase produced from a selected strain of Aspergillus sp. NATUZYM® MAX Ultra is a powerful macerating enzyme specially developed for hydrolysis of the soluble pectin in apples and pears, increasing press capacity and juice yield throughout the season. NATUZYM® MAX Ultra contains different pectinase activities such as pectin lyase, pectin-methylesterase and polygalacturonase required for apple and pear maceration. The product can be used at ambient temperature to macerate apples and pears processed in clear juice and concentrate.

DELTABREW Attenumax is an exo-1,4--D-glucosidase produced by selected strain of Aspergillus sp. This enzyme hydrolyses the 1,4-α linkages in liquefied starch and the 1,6-α linkages at a lower rate, thus optimizing the glucose level in the mash. DELTABREW® Attenumax is a very effective enzyme during mashing or during fermentation to adjust attenuation or for low calorie beer production.

DELTABREW Pure is a classical protease preparation used to prevent haze formation in beer caused by the association of proteins with phenolics during cold storage. DELTABREW® Pure can be added during fermentation, during maturation, or later in the bright beer tank before bottling.

DELTABREW ALDC is an acetolactate decarboxylase, produced by fermentation of a selected strain of Bacillus sp. Helping to prevent the diacetyl formation in beer, it is a key enzyme for rapid taste harmonization during green beer maturation. DELTABREW ALDC converts alpha-acetolactate directly into acetoin, and thus avoids its oxidative decarboxylation to diacetyl. The product can substantially reduce the time needed for green beer maturation.
