Lipomod® 166P è una lipasi fungina di Mucor javanicus. Lipomod® 166P predilige l'idrolisi degli acidi grassi a catena media e lunga dai trigliceridi, con conseguente produzione di sapori delicati e note di crema. Trattandosi di un prodotto non animale, Lipomod® 166P è adatto a prodotti vegetariani e kosher. Le lipasi e le esterasi idrolizzano i trigliceridi per liberare acidi grassi liberi (FFA). Questi enzimi sono diffusi in natura e possiedono diverse attività e specificità nei confronti dei substrati del triacilglicerolo (grasso). Gli acidi grassi hanno forti caratteristiche aromatiche e sono responsabili dei sapori associati ai prodotti caseari. Per il formaggio enzimatico modificato (EMC), le lipasi e le esterasi vengono utilizzate per produrre aromi concentrati specifici.
