Aximul F234 SG

Aximul F234 (Softex 74) SG is an ionic emulsifier that has hydrophilic properties that favour oil-in-water emulsions. It improves the viscoelasticity of wheat gluten due to its ability to interact with gluten. It also improves dough tolerance, increases water retention and supports finer crumb structure and increased volume in baked goods. The starch complexing properties retards starch retrogradation, imparting improved softness and fresh keeping qualities to baked goods.
