Food emulsifiers has several functions, including emulsification, dispersion, infiltration, foaming, de-foaming, mold-release, bacterio-statics, stabilization of system and mutual actions between starch and protein. Food emulsifiers are used to help these properties through a variety of mutual actions that will improve the quality of foods.
